It was a beautiful November Saturday in Los Cabos, and I was looking forward to a wonderful weekend. I treated myself to a round of golf at the Jack Nicklaus Ocean Nine Course, then had a light snack at the terrace followed by a couple of indulging hours of margaritas and lounging by the pool in Casa Oceano in Palmilla resort, where we decided to spent the weekend.
The main reason of my staying that weekend at Palmilla was the Culinary Evening at Agua restaurant, which marked already the 2nd Guest Chef appearance of Chef Enrique Olvera of Nr. 1 restaurant in Mexico, Pujol, at One&Only Palmilla. We took a short walk from the perfectly located Casa Oceano inside the resort to the lobby of One&Only, there we were received and escorted in a golf cart through the lush gardens of One&Only to the entrance of Agua.
I was very excited and had lots of expectations of this Culinary Evening. After being received by the hostess she asked us if we wanted to pass straight to dinner or have an aperitif at Agua Bar, which we did. We enjoyed a cocktail at the bar while we listened to the live band which in a mellow volume played smooth Latin, Caribbean and Brazilian tunes to entertain the dinner party. After a chat with One&Only’s new Managing Director Peter Bowling, and spotting Sammy Hagar, we decided to move on to the dinner table and start with the dinner prepared by Chef Olvera, and wine pairing provided by winemaker Humberto Falcón & Mariatinto.
We were seated and greeted by our waiter, and the dinner had started! The first course was a Beef tartar tostada with Alfalfa and Serrano chile paired with a gentle Celeste Blanco, Sauvignon Blanc, Valle de Guadalupe, 2011. A nice tasty entree and preparation to what we were about to enjoy.
Second came an Octopus Mexican Style, fresh and soft, it just melted in my mouth.
After the Octopus came my two favorite meals and wine of the evening; first a Fried Snapper with Zucchini, Chives, Cuaresmeño Chile and Quelites Green Mole, a delicious dish with a strong flavor perfectly paired with the “french jewel” of Humberto Falcón & Mariatinto, a Sang Bleu, Roussillon France 2009, a delicious wine with the character and flavor of ancient french grapes.
After that delicious Sang Bleu, the best pairing of the night came (in my humble opinion): Pork with recado blanco, Alfayocan bean and pickle vegetables paired with a Mariatinto Valle de Guadalupe, 2011. Mariatinto was a perfect companion for the exquisite pork that Chef Enrique Olvera prepared, so soft and delicious; a bold wine and strong character.
The night could not be complete without a couple of delicious desserts by Chef Olvera, first we had a Banana with Macadamia zest, mint and Sour Cream which was surprisingly good.
And as a grand finale came an Avocado mousse, Coconut milk and Grated macadamia nut, a true delicacy, both paired with a Caves da Montanha, Doce Portugal. That avocado mousse was truly mouthwatering, in fact, just by writing about it right now I wish I could have some more of it!
Overall, the Culinary Evening with Enrique Olvera was a wonderful culinary experience. The ambiance was relaxed, courses were prepared and served perfectly. The entire One & Only team was personally making sure that the guests are enjoying their evening. One&Only Palmilla’s Managing Director Peter Bowling, Chef Enrique Olvera and winemaker Humberto Falcon personally stopped by our table and chatted with us, asking us opinions, answering any questions we had about the meal or wines served.
After the dinner, we decided to stop at the Agua Bar for a night cap while we enjoyed a lively band and watching the guests dance to the tunes. Can’t wait till the Culinary Event at One&Only Palmilla in 2013!
